These dips just look so good.

Oktoberfest Trio of Beer Cheese Dips
A delicious trio of beer cheese dips made with stout, pale ale, and saison beers. For Oktoberfest or any time. This is from Cake ‘n’ Knife, a web site that is chocked full of fun recipes.
Ingredients
  • DUBLINER STOUT
  • 2 Tbsp flour
  • 2 Tbsp butter
  • ½ cup milk
  • ¾ cup Dark Stout
  • 12 oz Dubliner cheese, freshly grated
  • 1 tsp garlic powder
  • Salt & pepper
  • SPICY ALE CHEDDAR
  • 2 Tbsp flour
  • 2 Tbsp butter
  • ½ cup milk
  • ¾ cup Pale Ale
  • 12 oz sharp cheddar, freshly grated
  • 1 tsp cayenne pepper
  • Salt & pepper
  • SAISON MOZZARELLA
  • 2 Tbsp flour
  • 2 Tbsp butter
  • ⅓ cup milk
  • ½ cup Saison
  • 12 oz mozzarella, freshly grated
  • 2 Tbsp cream cheese
  • Salt & pepper
Directions
  1. Each of these beer cheese dips follows the same set of instructions. For each dip,  follow the instructions below using each set of ingredients.
  2. Start by making a roux. Melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.Whisk in the milk and beer. Cook until thickened slightly, approximately 3-5 minutes.
  3. Remove from heat and stir in the freshly grated cheese and spices. Season with salt and pepper to taste.
  4. Repeat this process with the remaining 2 dips. Serve immediately with warm, freshly baked pretzel bites
